3 Paleo Diet Recipes for a Healthy Summer Meal

Now that bathing suit season has arrived, many are looking for healthier meal options to stay slim in the summer. While seeking out healthier alternatives, people often turn to the very trendy, very healthy Paleo Diet. First, we’ll provide a little background on what this diet involves. According to nerdfitness.com, “the Paleo Diet is an effort to eat like we used to eat back in the day…way back in the day. If a caveman couldn’t eat it, neither can you.” Essentially, the Paleo Diet only includes foods that could be hunted/gathered in the prehistoric era. Therefore, this diet cuts out processed foods, like cereal and candy.  We’re going to give you a Paleo appetizer, entrée, and dessert so you can have a completely Paleo meal in no time.

The Paleo Diet Appetizer

This mouthwatering appetizer comes from Unbound Wellness, a blog dedicated to healthy eating. According to Michelle Hoover, the author of the blog and a Nutritional Therapy Practitioner, these sweet potato chicken poppers are comparable to any snack you’d find at a sports bar (but healthier). These Paleo Diet poppers are healthy because they are packed with veggies, use coconut flour and use organic, pasture-raised chicken.

For this Paleo Diet appetizer you’ll need:

  • 1 lb ground chicken (preferably pasture-raised)
  • 2 cups raw sweet potato, finely grated
  • 2 tbsp coconut oil + 1 tsp for greasing the baking sheet
  • 2-3 sprigs green onion, finely chopped,
  • 3 tsp garlic powder
  • 2 tsp onion powder
  • ½ tsp salt
  • 2 tbsp cocnut flour
  • Optional: 1 tsp paprika or chili powder for an extra kick

The Paleo Diet Entrée

For the next course, we’re sharing a tasty Paleo Diet turkey cutlet recipe from Paleo Running Momma. What stood out to us the most about this particular recipe was how much it looks like a plate of fried chicken. It may have the same crunch as fried chicken, but it’s a much healthier option. This Paleo Diet walnut-crusted turkey cutlet with “honey” mustard recipes is guaranteed to please the whole family. Michele, the author of this blog, says that making extra dipping sauce makes this a super kid-friendly meal that’s fun to eat.

For this Paleo Diet entrée you’ll need:

  • 5-6 turkey cutlets (about 1.5 lbs), pounded thin to about ¼ – ½” thickness
  • 1/3 cup unsweetened shredded coconut
  • ¾ tsp fine grain sea salt
  • 2 cups shelled walnuts
  • ¼ tsp black pepper
  • 1 large egg
  • ¾ tsp smoked paprika
  • Finely chopped parsley for garnish

For the sauce:

  • ½ cup dates, soaked to soften
  • 3 tbsp water
  • ¼ cup spicy brown mustard
  • ½ tsp fresh lemon juice
  • 3 tbsp olive oil

The Paleo Diet Dessert

Last, but not least, is the Paleo Diet dessert. Who says you can’t have sweets when you’re on a diet? These scrumptious mini lemon tarts, from Texanerin, are the perfect ending to your paleo meal. Erin, the author, says she normally prefers a sugar-cookie like crust, but those are packed with refined white sugar – not paleo-friendly. After a lot of testing (and taste-testing!) she finally created the perfect paleo crust for these tiny tarts. Not only are they delicious, they’re adorable too!

For this Paleo Diet dessert you’ll need:

  • 3 large eggs
  • ¼ cups honey
  • Zest of 2 lemons (1 tbsp)
  • Pinch of salt
  • ¼ cup refined coconut oil
  • 1/3 cup + 1 tbsp freshly squeezed lemon juice

For the crust:

  • 3 tbsp refined coconut oil, softened
  • 2 tbsp honey
  • ½ tbsp. ground cinnamon
  • 3/8 tsp salt
  • 5 cups blanched almond flour

The Paleo Diet is not as scary as it sounds. With a little creativity and the right ingredients you can have a tasty, healthy three-course meal.
